Little things I’ve been doing to get back into being a morning person!

Chickpea Cookie Dough Recipe:

Hydrated chickpeas or 1 15oz can of chickpeas
½ cup almond butter or peanut butter (I used almond butter)
3 Tbsp maple syrup (or to taste, you can also use agave nectar or coconut sugar)
1 tsp vanilla extract
½ cup dark chocolate chips or sweet cacoa nibs
Dash of cacao powder

Instructions:
Combine chickpeas, butter, sweetener, and vanilla in a food processor and blend until smooth.
Mix in chocolate chips
Put in the fridge until chilled. Serve cold.

A few blogs added a teaspoon of baking soda and baked cookies, I haven’t tried that yet but I’m sure it’s good too!
